The company I work for had a chili cook off around Halloween; and I signed up for it thinking it wasn’t such a big deal. But I was a little unsure of what I was going to do because I don’t really cook chili. . I knew I wanted to make it spicy and I wanted to use the scotch bonnet peppers as that is a pepper used a lot in the Caribbean. A friend also suggested that I make a little sweet as well and I love sweet and spicy anything.
So now that I had a start, I just had to think about the ingredients. I didn’t want anything fancy or hard to find whenever we wanted to make the chili again. I used simple ingredients and took my time cooking. I think that was the most important thing for me to successfully make this chili, I took my time and prepped all of my ingredients before I started cooking. I didn’t want anything burning, being too salty, or being to sweet.
Without tooting my own horn, this is probably one of the best things I have ever cooked, I even got the seal of approval from my husband.
So below you will find the ingredients and directions to make this amazing sweet and spicy chili that taste good by itself, on pasta, or however you like to eat your chili. Also did I mention that this chili won 3rd place in said cook off.
Sweet and Spicy Chili
Ingredients
- 2-3 tbsp Brown Sugar
- 28 oz Can of whole Tomatoes
- 2 Scotch Bonnet Peppers
- 2.25 lbs Ground Beef
- 1 Whole Onion
- Salt To your taste
- Pepper To your taste
- Paprika To your taste
- Crushed Red Pepper To your taste
- 5-6 Cloves of Garlic Can also use 2 tbsp of minced garlic
- 2 15.5 oz Cans of Red Beans
- 3 oz Tomato Paste
Instructions
- Add oil to the pot. After we will add the onions, garlic, and pepper. Squish the pepper Let the flavors come out. Keep an eye out as you will remove this pepper before adding the second.
- Add the tomatoes. If you are using fresh tomatoes , use a masher to mash them. This step helps bring out the juices. If you a re using canned stewed tomatoes, you can skip this part. Let this simmer for about 5 mins.
- Take out the first scotch bonnet pepper. Add in the beef and the second pepper.
- After mixing in the beef and pepper, mix in the tomato paste, brown sugar, paprika, salt, pepper, and crushed red pepper. Let simmer for about 5 mins
- The last ingredient is to add the beans and the let the chili simmer for about tens more minutes while covered
- After it simmers remove the scotch bonnet pepper and you are all set.
